This hand forged Traditional Japanese Style chef knife (Kiritsuke) has a EN45 steel blade which has an unbelievably sharp single bevel edge. The asymmetrical blade has brute de forge finish with polished cutting edge.
Kiritsuke knife is one of most versatile Japanese Traditional Style knives that is used mainly for thinly slicing fish, vegetables, and fruit, using push/pull cutting.
It has a handle made from buffalo horn, brass, coffee brown stabilized ashtree burl, that is comfortable in the hand, light and very nicely balanced.
